Asparagus is a good source of folic acid, vitamin A, B vitamins, calcium and fiber. They have a cleansing effect; their fibers help us clean out our gastrointestinal tract. They also help the body get rid of the excess water. A great way to easily incorporate this vegetable into your diet is to gather several bunches (organic preferred) and make into a delicious soup. Once you try this you’ll be hooked.
- 2 bunches asparagus
- 1 med size onion
- 2 med/large carrots
- 4 garlic cloves
- Organic chicken broth
- 1 tbsp fresh or dried tarragon
- 1/4 cup olive oil
- Sea salt to taste
Sauté onion, and garlic and 1/4 cup olive oil until soft
Add to cut up vegetables and tarragon in soup pot
Cover with chicken broth (not higher than top of veggies or it will be too thin)
Cover with lid on med high
Once veggies are soft puree with hand held blender
Wait till soups cools down before serving, this brings out flavor. Enjoy!
